Multilayered and complex, the second vintage from Ao Yun captures the terroir of the winery’s stunning location, high in the Himalayan foothills in China’s Yunnan province.Ao Yun winemakers have continued their unique adventure with this blend of cabernet sauvignon and a touch of cabernet franc, finding a balance between fresh minerality and dark sweetness.
Color is intense and rich. Identity with multiple layers. We detect spice in the form of cinnamon/liquorice, freshness in the form of mint/cedar wood, earth in the form of leather/humus, mineral in the form of graphite/lead pencil, and red fruit in the form of cherry/black current. The palate is dry with a medium to full body and a lengthy and refined tannic structure. The nose is confirmed by a slew of refreshing, fruity, and mineral notes such as peony, seaweed, wild black raspberry, and graphite. Excellent balance of minerality/acidity and sweetness/alcohol.
Serve with braised short ribs or black pepper beef ribeye.
