Dalwhinnie Distillery, located in the Highlands region of Scotland, was created in 1897 by John Grant and was previously known as Strathspey Distillery. Grant declared bankruptcy in 1898 and sold the distillery to AP Blyth, who renamed it Dalwhinnie. The name Dalwhinnie, which roughly translates to “meeting place” in old Gaelic, refers to the cattle farmers who would stop at Dalwhinnie on their way south to the cattle markets in Crieff and Falkirk.
Dalwhinnie Single Malt Scotch Whisky is prepared from newly harvested, plump barley that is crushed and mashed with water from Lochan a Doire Uaine (literally “Loch of the Green Thicket”). The pristine spring water that flows through local peat before reaching the loch (which is located 2,000 feet above sea level) adds a delicate yet subtle richness to the whisky. No other distillery may lawfully use water collected from Lochan a Doire Uaine, hence no other distillery can recreate Dalwhinnie Single Malt Scotch Whisky’s distinct malty-sweet flavor.
After milling and mashing, the barley is fermented in the distillery’s old wooden washbacks. While hardwood washbacks are more expensive and difficult to maintain than stainless steel washbacks, they absorb some of the heat created during fermentation, allowing for a slower and longer fermentation process. Following fermentation, the wash is distilled twice, once in Dalwhinnie’s copper-pot wash still and once in its copper-pot spirit still.
