Bimber Single Cask #93 – Virgin Cask – LMDW

Description

Dariusz and Ewelina, the founders of London’s Bimber distillery, relocated from Poland to the UK in 2003, building their distillery in the Park Royal neighborhood of west London twelve years later. Plazewski inherited his grandfather’s fondness for whisky, who also produced his own spirits. The company’s initial casks were laid down on May 26, 2016, and three years later, in September 2019, they released their first single malt. For more than a century, this was the first whisky made and bottled in London. The distillery has a “farm-to-bottle” strategy, obtaining all of its barley from a single source and employing traditional floor maltings and slow fermentation procedures. Distillation is carried out using a 1,000-litre wash still and a 600-litre spirit still made by Hoga of Spain.
